All a girl needs… Cupcakes and Friends


I tried my hand at homemade cupcakes. They have fresh peaches mixed in with a brown sugar cream cheese icing. They’re quite delish.

er at a friend’s house, and since they were cooking and providing the main course, I figured I ought to put my own culinary expertise to good use and make dessert. Plus, it was their cousin’s birthday a week or so ago, and he didn’t have a cake. And what says Happy Birthday better than some peach cupcakes?

I’m loving summer and summer produce. Awesome cucumbers, tomatoes, apples, strawberries (oh my gosh), and peaches. ❤ I wish summer would stay year round…



3 cups flour

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

a pinch of nutmeg

3/4 cup of unsalted butter (at room temp)

3/4 cup of granulated sugar

3/4 cup of light brown sugar

2 eggs (lightly beaten)

1 teaspoon vanilla

1 1/2 cup of buttermilk

3 large peaches, peeled and cored and diced/chopped


1. Preheat oven to 350* F.

2. In a medium bowl, combine flour, baking powder, baking soda, salt, and

nutmeg. (I also added a pinch of cinnamon)

3. Cream the butter and sugars together. (I almost forgot the brown sugar, I

about died!) Beat until fluffy. Add the eggs one at a time. Add the vanilla. Gently mix in the buttermilk. Slowly stir in the dry ingredients (from step 2). Fold in the chopped peaches. Num num num. Should look something like:

4. Line cups with paper liners. Scoop the batter.

Cupcakes Pre-Baking

5. Bake for 18-21 minutes (Depends on how much batter you scoop out. Smaller cupcakes: about 18 minutes. Larger cupcakes, closer to 21 minutes. But using a toothpick as a tester never fails. Insert toothpick, pull out. If it

comes out clean, they’re fini!)

6. Cool for 5 minutes in pans. Then place them on wire rack to finish cooling.

Frosting Ingredients:

3/4 cup of light brown sugar

1/8 cup cornstarch

1/4 cup powdered sugar

8 oz cream cheese (room temp is easiest)

1/4 teaspoon vanilla abstract

1/4 cup unsalted butter, also at room temp

Directions for icing:

1. Combine brown sugar, corn starch, and powdered sugar.

2. In another bowl, beat cream cheese and butter until it’s smooth and fluffy.

3. Add dry mix and vanilla.

4. Beat til frosting is light and smooth again.

5. Chill until cupcakes are reading for frosting.

6. Create crazy designs. Such as:

(This recipe was originally from somewhere else… and this was before I started writing down my exact sources for things like this. This is by no means my recipe… And if anyone comes across the correct source, let me know. I’d really like to give him/her credit… because these cupcakes rock!)
